Breakfast Casserole For Crowds and Meal Prep

A filling and nutritious family-favorite.

Equipment

  • 2 Large Lidded Pans
  • 1 Large Casserole Dish
  • 1 Chopping Board
  • Utensils

Ingredients
  

  • 12 Large Eggs
  • 1 Bag Shredded Cheddar Cheese You can easily use different cheese if you already have on-hand! You won't be using the whole bag necessarily. I just eyeball my sprinkles of cheese as I add in.
  • 1 Bag Frozen Diced Potatoes This might also be labeled hash browns. Make sure to get plain to avoid added salt. I like to keep it as healthy as possible!
  • 1 Bag Frozen Onions
  • 1 Bag Frozen Chopped Bell Peppers Feel free to use fresh onions and peppers instead. I like to keep it easy by using frozen, pre-chopped veggies. A frozen onion/pepper stir fry mix works too.
  • 1 Bag Breakfast Sausage Patties
  • 1 Ground Pepper
  • 1 Can Cooking Spray

Instructions
 

  • Preheat the oven to 350F.
  • In the large casserole dish, add frozen potatoes, onions, and peppers to measure out the amount you should heat up. The vegetables should fill a thick, generous layer at the bottom of the dish.
  • Heat up a drizzle of olive oil in large lidded pan and add the portioned potatoes, onions, and peppers. Defrost and cook on medium/high.
  • While the veggies are cooking, use the same method of using the casserole dish to measure out how many sausage patties you'll need.
  • Follow sausage cooking instructions. (For the large casserole, you may want to do in a pan versus microwave since there are so many!)
  • Don't forget to stir the veggies throughout this process so they cook even and don't burn!
  • Now, spray the casserole dish with cooking spray.
  • Crack the dozen of eggs directly into the casserole dish, add a splash of water, and whisk right in the dish. (I used to use a separate prep bowl for cracking and whisking until I realized I could be more efficient!)
  • When the veggies are done (potatoes should be browned), add directly into the casserole dish with the whisked eggs.
  • When the sausage patties are done, chop up into smaller pieces and add into the casserole dish as well.
  • Add ground pepper and generous layers of sprinkled cheese.
  • Mix all ingredients in the casserole dish around with a utensil and add a final sprinkle of cheese on top.
  • Cover the casserole dish with tinfoil (or maybe you have a lid!)
  • Bake in oven for 35 minutes.
  • Check how the casserole is looking at 35 minutes. This is when you'll likely remove the tin foil and cook for 15-20 more minutes. You'll know the casserole is done when it's no longer liquidy.
  • Remove from oven and serve!
