These easy fish tacos are made with frozen wild-caught pollock fish fillets and topped with magical jalepeño sauce! 

I made the most scrumptious, quick, and easy fish tacos this week and was jumping for joy that I finally nailed a recipe for this meal. I LOVE fish tacos, but couldn’t get them right for so long. The transformative ingredients? Frozen fish fillets and a magical spicy sauce.

The Frozen Fish Fillets I Use for Easy Fish Tacos:

The frozen fish fillets I use and that I’ve been loving are Gorton’s Golden Crispy Panko Fish Fillets, pictured above. We purchased at BJ’s! Since I’m just cooking for two, I am able to fit all our fish fillets (one per mini taco) in our toaster oven. I line our toaster oven tray with aluminum foil, so there is no mess (always a plus!).

The Secret Sauce:

I’ve searched high and low for the right fish taco sauce, and the Trader Joe’s Jalapeño Sauce (pictured above) is “I-T it”. (If you don’t like spicy, this sauce is not for you. Instead, I may recommend you try Trader Joe’s cilantro salad dressing.) When topping the fish tacos with this extra spicy sauce, I also drizzle on a tasty Trader Joe’s Roasted Tomatillo Salsa Verde. The Jalapeño Sauce is really the star of the show though!

Other Key Ingredients:

  • Chopped Green Cabbage: The Southwestern Chopped Salad Mix from Trader Joe’s works out so nicely because its main incredient is green cabbage, which gives that needed crunch and substance.
  • Mini Flour Tortillas: The mini flour tortillas are the perfect size for the fish fillets!
  • Sliced Grape Tomatoes: I slice up grape tomatoes instead of a whole tomatoes, and they fit the whole ‘mini taco’ vibe. They also are a lot less watery than other tomatoes once sliced, which I like!
  • Mexican Cheese Blend: I make a line of cheese on each tortilla on the plate and put in the microwave for 20 seconds to warm up. *Side Note: Warming up the tortilla prevents breakage.

Easy Fish Tacos

  • 1 Toaster Oven or Oven
  • 1 Oven Tray with Tin Foil
  • 1 Small Cutting Board This is just to slice the tomatoes! This is the "biggest" prep of the entire recipe. It's so little effort – amazing!
  • Utensils

Ingredients
  

  • 1 Bag Gorton's Golden Crispy Panko Fish Fillets (Frozen) You'll need one fillet per taco!
  • 1 Bottle Trader Joe's Jalapeño Sauce
  • 1 Container Trader Joe's Salsa Verde
  • 1 Package Mini Flour Tortillas
  • 1 Bag Chopped Green Cabbage
  • 1 Bag Mexican Cheese Blend
  • 1 Package Grape Tomatoes

Instructions
 

  • Line your toaster oven or oven tray with aluminum foil for easy clean-up.
  • Take your frozen fish fillets out of the freezer and place the number you will need on the aluminum foil-lined tray. You will need one fillet per taco.
    (For example, 6 tacos = 6 fillets. I'd recommend making 3 tacos per hungry person for a full meal.)
  • Follow fish fillet package instructions (typically baked at 450 F for 20 minutes).
    (If cooking for two or less, you can just use a toaster oven – so easy. If you're making for a larger group, you'll want to use a full oven.)
  • Wash and slice grape tomatoes.
  • Now, we are going to warm up the tortillas with some cheese on them as the fish fillets finish their last couple of baking minutes.
    *If cooking for two or less, just use the microwave for each plate served. For example., place 3 mini flour tortillas on a plate and form a line of Mexican cheese on each tortilla. Heat for 20 seconds. Repeat for the second plate.
    *If cooking for more than two, you can warm these up on another tray in the oven!
  • Safely remove the warmed-up tortillas/cheese and baked fillets from their respective heating sources.
  • Place one fillet on each tortilla and add your toppings – cabbage, tomatoes, jalapeño sauce, salsa verde.
  • Enjoy!
