Applesauce Oatmeal Banana Muffins Ingredients

These applesauce oatmeal banana muffins are made with only healthy and unrefined ingredients. The wholesome ingredients are bananas, unsweetened applesauce, apple, oatmeal, egg, baking powder, baking soda, cinnamon, pure vanilla extract, date, and flax seeds. No sweeteners are needed because these ingredients are naturally sweet and delicious!

Prep and Storage

For easy prep, I like to blend these ingredients in a large blender. I then transfer the batter into reusable silicone cupcake liners for baking. I’ll link to the type of silicone cupcake liners here if you’re wanting some too! Two small muffins make a glorious breakfast and pair nicely with coffee. Since the muffins are prepped for the week, healthy eating is a lot easier — simply grab your muffins in the morning and enjoy! Make sure to store the muffins in an airtight container so they stay moist and fresh all week.

Equipment

  • Pack of Reusable Silicon Cupcake Liners
  • Cookie Tray
  • Large Blender You could get away with just chopping, mashing, and stirring, but I recommend using a blender!
  • Measuring Cups

Ingredients
  

  • 1/4 Cup Unsweetened Applesauce
  • 1 Chopped Apple
  • 1 Large Banana
  • 1 1/4 Cup Old-Fashioned Rolled Oats
  • 1 Egg
  • 1 Date
  • 1 Teaspoon Cinnamon
  • 1 1/2 Teaspoons Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1 Teaspoon Pure Vanilla Extract
  • 1 Teaspoon Flax Seeds

Instructions
 

  • Preheat the oven to 350F.
  • Add all of the ingredients into a large blender and blend until a batter forms.
  • Place and space out reusable silicone cupcake liners on a cookie tray.
  • Transfer the batter into the cupcake liners, filling the cups 3/4 of the way full.
  • Bake for about 15 minutes.
  • Remove from the oven. Let the muffins cool a little bit and remove muffins from the reusable liners. Serve and enjoy!
  • Muffins will keep fresh for about a week in an airtight container.
