Norma's Pecan Muffins: Home-Grown And Hand-Picked In Sweet Home Alabama

Equipment

  • 1 Cookie Sheet or Muffin Tray
  • 1 Package Reusable Silicone Baking Cups
  • 1 Microwave-Safe Mixing Bowl
  • 1 Spoon
  • Measuring Spoons
  • 1 Knife
  • 1 Cutting Board

Ingredients
  

  • 1/2 Cup Butter You can substitute fully or replace a portion with unsweetened applesauce to make it a bit healthier! The swap should be an equal measurement.
  • 2 Large Eggs
  • 1 Cup Brown Sugar
  • 1/2 Cup All-Purpose Flour
  • 1 Tsp. Vanilla Extract
  • 1 Cup Chopped Pecans

Instructions
 

  • Preheat oven to 350F.
  • If you are starting with whole nuts, chop the pecans into small nibs.
  • Melt the butter in microwave-safe mixing bowl.
  • Add all other ingredients into mixing bowl and mix until it forms a blended batter.
  • Spray reusable baking cups with canola oil and fill about 3/4 of the way full with batter.
  • Bake in oven for about 25 minutes.
