My future mother-in-law recently sent Jim home with pecans and recipes to pair with the special nuts grown at her cousin Charlene’s farm in Alabama. Pecans taste delicious raw (especially when fresh and grown with love), but they can also be added into muffins or on top of a yogurt parfait or oatmeal for a gourmet touch. I decided to try out the pecan muffin recipe passed down through generations, and boy, it was delicious with tea for breakfast. I look forward to trying out more variations of baked pecan goods as we continue to enjoy Charlene’s home-grown pecans and recipes from her mother, Norma!

NOTE: I use reusable silicone non-stick baking cups, and the muffins pop right out when you spray them with cooking spray! I also have silicone donut molds for other recipes. They are food-safe, waste-reducing, and BPA-free.

Norma’s Pecan Muffins: Home-Grown And Hand-Picked In Sweet Home Alabama

  • 1 Cookie Sheet or Muffin Tray
  • 1 Package Reusable Silicone Baking Cups
  • 1 Microwave-Safe Mixing Bowl
  • 1 Spoon
  • Measuring Spoons
  • 1 Knife
  • 1 Cutting Board

Ingredients
  

  • 1/2 Cup Butter You can substitute fully or replace a portion with unsweetened applesauce to make it a bit healthier! The swap should be an equal measurement.
  • 2 Large Eggs
  • 1 Cup Brown Sugar
  • 1/2 Cup All-Purpose Flour
  • 1 Tsp. Vanilla Extract
  • 1 Cup Chopped Pecans

Instructions
 

  • Preheat oven to 350F.
  • If you are starting with whole nuts, chop the pecans into small nibs.
  • Melt the butter in microwave-safe mixing bowl.
  • Add all other ingredients into mixing bowl and mix until it forms a blended batter.
  • Spray reusable baking cups with canola oil and fill about 3/4 of the way full with batter.
  • Bake in oven for about 25 minutes.
