Avocado Toast with Hard Boiled Egg & Hot Sauce
Sometimes, the simplest meals are the most healthy and delicious – like avocado toast with hard boiled egg. Since eggs are healthy and quick to cook, they’re a key protein to have in your fridge. That way, when you’re “hangry,” there’s a quick and nutritious meal in sight! I’ve been loving the avocado toast with hard boiled egg for my lunches, especially with a dash of hot sauce for a tasty kick!

Health Benefits of Eggs
If you’re curious about the health benefits of eggs, you may find this Healthline resource informative and interesting. At one point in the news cycle, eggs got a bad reputation for increasing cholesterol. The Healthline resource notes that while eggs are indeed high in cholesterol, they are high in the “good kind” of cholesterol. The “good kind” can lower risk of heart disease, stroke and other health problems. Eggs are also loaded with protein and nutrients essential to a healthy diet – a variety of vitamins, calcium, zinc, and more.
The Avocado Superfood
Moving on to avocado, that’s where you’ll get healthy fats, potassium, fiber, and amazing anti-inflammatory powers. Healthline also has a resource on the health benefits of avocados if you’re interested in that too! I’ve been very into learning more about the powers of the anti-inflammatory diet (*dabbling* – as I do). That’s how I got to this lunch idea!
Anti-inflammatory diets eliminate refined breads. If you’re looking to go fully anti-inflammatory, it may be worth exploring the least processed bread options available. Here’s a Livestrong resource on healthy breads to eat for anti-inflammatory diets too!
